Ales are distinctive because of the use of top fermenting yeasts. These yeast impart
fruitiness to the beers due to the esters that are a product of the frementation
process. I find that ales are far more complex in their flavours than pilseners and
reward the drinker more.
I have broken out the ales into separate styles where there are enough to warrent it or
the style is an important stle such as Sparkling Ale. Having said that, there is one
ale listed below that will blow away almost any other Australian beer and that is the
Hahn Millennium Ale. Have a try of this one and you will see what I mean about ales
being rewarding!

What can I say about this beer but superb! The brewers at Hahn took a chance with
this beer. It is styled on Chimay Red, a trappist ale, a well known style overseas
but little know in Australia. They have produced a wonderful abbey styled ale(as it
is not produced by Trappist monks it can't be termed a Trappist ale). Full marks on
this beer. However, a word of warning on this beer, it is made in vintages and it
is often best left to mature in the bottle for a year or two. Like a wine this is a
living beer and will mature as it is left on it's lees. It is not like anything
that most of you are used to drinking, it is big, sweet and very alcoholic with
pronounced malt and hints of fruit, chocolate and coffee. Try to drink it from a
goblet (if you have a Chimay glass hen use it), it really does make a difference to
the taste. make sure you get a good head when you pour the beer. I wish more
brewers would take a chance and make some of these great beers!!!

This is the first beer to be produced by Dr Chuck Hahn at his new Maltshovel
Brewery. It is a great beer, in fact one of the best beers to be produced in
Australia in recent years. It has a great mouth feel with all the subtle estery
flavours, hops and sweetness that a good ale should have. Chuck said this about the
ale "This premium hand-crafted ale is a unique brew of three malts and three
Tasmanian hops, added late to the kettle, plus an original 125-year old, top
fermenting ale yeast. These ingredients create an easy-drinking, deep
copper-coloured ale with distinct richness, creamy head, and a slightly nutty
finish."
